• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Do you rub your butt the night before?

Got an 8lb butt going on the Classic tomorrow after golf. Curious, how many of you rub your butt the morning of or the night before, or both?

I think you could do either and have great results. If I have the time and bandwidth, I like to salt the night before. Especially with big cuts of meat. My thinking is the extra time allows for the most salt penetration and osmosis. The next morning, I'll pull it out of the fridge and add pepper and other seasonings to the meat and let it rest on the counter while I fire up the smoker and wait for my Pitt temps to stabilize and smoke to clear.
 
Salt and some white sugar the day before, Molasses and rub morning of.
 
If I rub them at all I do it before I start my fire. I'll let them sweat on the countertop and moisten the rub for a bit until the cooker is ready. You could certainly do it the night before and save a little bit of time, wont hurt.
 
I used to and found that especially with pork, the rub was pulling moisture out off the meat. I would always find a pool of liquid in the pan and never injected or used any liquid during the rub process. The rub isn't overly salty so I have no idea why this happened.
 
if you put salt on too early, wouldnt it start curing?
 
I have done it both ways with good success.

Generally, if I rub the night before I also wrap it tightly with plastic wrap - this seems to help it not to lose the moisture that is pulled to the surface and it seems to reabsorb much of the "wet" while sitting out with the wrap removed the day of the cook while I get everything ready to put it in the smoker.
 
I don't rub that early. Even though my rubs are not very salty. An hour or two is good for me. I start the fire and then rub. When the pit is up to temp they go on.
 
I do, and wrap - not for any real reason other than it’s one less thing to do in the morning. Seems to work ok.
 
Played 18 holes then came home and lit Big Joe. Trimmed a little fat cap then added rub. 45 minutes lates Joe at 265, added more rub then on the pit.

3 hours at 270 IT at 145 and bark looks good. In the pan and covered with foil. I’ll check tenderness in a couple of hours.

I was listening to a pod cast recently and if memory serves, they recommend the rub 1-2 hours prior but "up to 8 hours is OK".
 
Double wrapped in foil and a towel and resting in a cooler. Checking in 1-1.5 hours. Pig juice for mixing. 6 hours. Final temp I checked at the end 208.

If I rub at night it's usually around midnight and know I won't want to get up early to do prep. I haven't really noticed a difference between the 2 methods. I am going to inject tonight though
 
Shouldn't this be in Woodpile? :mrgreen:
