• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Please accept this as my official entry into the Breakfast Throwdown.

A couple of weeks ago I got a couple of Brisket flats and corned them for pastrami. I had never dealt with this company before and was expecting full packers and only received a case of flats.

I set up a charcoal chimney loaded with lump and got her going good.



I ground some pastrami and diced some taters and mixed up the hash. Set up my little Lodge cast iron skillet and jot jiggy with it.





Added an egg



Toasted a bagel and melted some cheese over a couple of slices of ham.



Got everything ready to plate.

Breakfast Fatty Croissant

This is my entry into the "Breakfast" Throwdown.

Yesterday I made two different breakfast fatties. The first was an idea I came up with after researching fatties and thinking about what goes great with sausage. I dub this a Breakfast Fatty Croissant. (Link to that cook: http://www.bbq-brethren.com/forum/showthread.php?t=226472)

I cooked these at 350 for 1 hour. I cooked on the upper rack because I wanted the dome to radiate heat onto the tops. (The bottom of the Breakfast Croissant got a little dark so next time I’ll adjust to a shorter time)

The second was an idea I borrowed (or ripped off :mrgreen:) from something Ron L entered in a Fatty Throwdown back in 2010. I dub this a "Blanket in a Pig Fatty" (Link to that cook: http://www.bbq-brethren.com/forum/showthread.php?t=226471)

and with some maple syrup and powdered sugar.

I was afraid the pancake would absorb lots of the sausage grease. But as you can see from the pictures the pancake was nice and fluffy and absorbed the maple syrup really well.

Since the first idea is mine, and I like this photo best, here is my "Money" shot below.
