Dino ribs in cryovac

Good afternoon Brethren,

I just bought some really big dino ribs that I'm making for Christmas dinner. I need to know how long they can stay in the fridge in cryovac.

What’s the use by date in the package? My experience that the bones/bone in meat spoils quicker than boneless cuts.

Yup, safe to use by the date stamped or even a bit after as long as they weren't mishandled before you bought them.

Afterall, the store will sell them right up to that date anyway. Cryovac helps a bunch to extend shelf life.

I'd freeze them and take them out 48 hours before you want to cook them.
