• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I thought that I send this out to the Brothers and Sisters for Discussion. I was voted over 10 years ago to be Head Cook for Deer Camp. I cook for 8-10 people for three days or 7 meals. These people converge on or farm where there is a 4 bedroom ranch house. It is quite eventful! I always put out a good spread but it been the same for several years. I would like to kick it up a notch. At least I don't have to do dishes! take out or add anything. I will make sure and take pron photos. Here is last years meals:

In between Snacks (New addition during spring Turkey season was fatties went over well) Carmel Apple Dump Cake Weekend smoked stew
with veggies. On all weekend in crock pot Homemade Cookies

Last year I was not lurking as much as I am now so I have seen a lot of pron here so I will have to see how to incorporate it into the menu. These are very big eaters. Example we easily polish off 40 biscuits at breakfast.
 
Meatloaf I cooked for 60 was a hit. I practiced for about 2 weeks and made about 8 loafs to come up with this and they were awesome.

80/20 ground chuck beef 5 lbs & 1 lb Jimmy Dean Italian sausage, added 2 eggs, 1 cup Italian breadcrumbs and one table spoon of chopped garlic & 1 cup shredded Italian cheese (Sargento) mix cheese. (Salt & black pepper) Mixed but did not over work.

Spread out on wax paper put another piece of wax paper on top to flatten 1" thick with rolling pin. In a bowl put a mixture of chopped sautéed onions & mushrooms cooled, 2 eggs, 1 more cup of shredded cheese, one more cup of Italian breadcrumbs, 2 cups chopped frozen spinach (thawed & drained) & some finely chopped cilantro, mix up good then season mixture with salt & pepper. Spread mixture out on the meat not quite to the edges and roll up using the wax paper. Used excess meat to cap ends
I topped the loafs with my beef rub & smoked seam side down with drip pans under until inside temp was 165 / Baked some too & the baked ones at 325 for 1.5 – 2 hrs were better.

These were the best/only meat loafs I ever made.
Approx 8 lbs each. I wish I had pics for you guys.
When you slice them they have a pinwheel look.

Cracker’s Stuffed Mushrooms
1 pkg. 16 oz pork sausage, cooked well, crumbled, and drained
1 pkg. Large fresh mushrooms
1 pkg. Frozen chopped spinach, thawed
½ cup Grated Parmesan cheese
2 tablespoons olive oil
2 tablespoon Italian-style bread crumbs
2 tablespoon melted butter
Preheat oven to 350 F. Remove stems from mushrooms; reserve for another use. Rub all the mushroom caps with olive oil and place mushrooms rounded side down in a baking dish. Drain and press spinach to remove excess liquid. Combine sausage, spinach, parmesan cheese and olive oil; mix well. Stuff the sausage mixture into mushroom caps. Sprinkle with bread crumbs; drizzle with melted butter. Bake 30-45 minutes or until topping is brown.
 
I also cook at deer camp in Benezette, PA we have approx 10 guys 5 days.
I always struggle to make it good.

Cornbeef hash and potatoes, run the cornbeef thru a grinder and mix with potatoes and fry...
 
We always have Scotch Eggs (Hard boiled eggs crusted with Sausage) not to be confused with Scotch and eggs which is a Ice fishing favorite (no Guns involved)

We have smoked them before with a Turbinado coating or a good Sweet Rub.

All these ideas sound great. 7 and 7 eggs on Sunday (No Guns) Work day on farm for Hunting privileges for 2008! Each Hunter must donate time on the farm three 8 hours days per year. Actually there is a waiting list. Hmmmmm Gonna work on all these and see what menu looks like... Keep ummmm coming!
 
Last week my wife grabbed a can of salmon, removed meat from bones and browned salmon with onions until crispy.
She put the mixture into omletts......OMG good chit for sure.
We will be doing that many many more times as well.
 
What to cook

Grits are great for morning and dinner, porkchops, stew, fritta.....
 
Not sure if you've done beef ribs as a part of the meat you offer, but I added big meaty beef ribs (dinosaur/brontosaurus will help in a search here) to my repetiore this camp season.

I too am the hunting camp cook. My wife's family are all hunters, and I love getting together with them, but do not hunt myself. They love that I come and cook, and I get to practice on a captive audience. :biggrin: Only drawback is that they don't provide ture feedback... They want to be sure they don't discourage me from continuing to feed them by telling me that something doesn't taste fantastic. That led me to try competitions where I could get a more objective view of my BBQ.

Anyway, long story short, I'm glad to meet others here on the board in the same situation as me!
 
Chit i wish i was a cook for a hunting camp I hate hunting but i love cooking for people even better if you dont have to do dishes. I do have a great breakfast caserol my granny gave me if you want it.
