I get to design a custom cooking trailer for my company to entertain customers with.

I got the grill figured out (48" wide and 32" depth)

I got the propane cookers figured out (2 sets of 2 burners) for fish, fries, etc......

Question is on the smoker, I am thinking of a fridge style 36" x 24" x 5' tall. How should I arrange the vents?

Slide vent or 2 at the bottom? One on each side? Wheel vent or 2?

Should the exhaust be an open pipe with or without a damper?

This is going to be such a cool project, money is no problem and all materials are stainless steel on a custom built tandem axle trailer.

Any and all advice is welcomed!
