A frend's daughter is getting married, and he asked me to do the Q for the wedding reception this weekend. Wanted brisket, pulled pork, sausage, chicken and sides for 75 hungry folks.

Well, two pulled butts are already vac'ed and in the freezer, briskets are in the WSM now, hot and fast at 300°.

Briskets all rubbed up, ready for the bullet:

The WSM up to temp - perfect thin blue smoke (the reflected sky doesn't look too bad either):

Closeup of the thermo - running along at 300° for a hot/fast smoke (airflow mod):

Briskets are done - getting foiled to rest:

Two more pork butts going on the smoker (as well as the points for some burnt ends):

Here are the three brisket flats, vacuumed and ready for Saturday:

And a nice pan of burnt ends!:

No butt pics, but we've all seen pictures of pulled pork before...
It's all tucked away nicely in the freezer, but I'll try to remember to snap some pics on Saturday...
