• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

My wife does this in her "Yellow Pot"...but it's great over a camp fire or in a cast iron dutch oven.

1 1/2 lbs beef stew meat cut in 1 inch cubes
3 tablespoons all purpose flour
2 tablespoons cooking oil
1 1/2 cups strong coffee
2 tablespoons molasses
1 clove garlic, minced (my wife uses 3)
1 teaspoon Worcestershire sauce
1/2 teaspoon dried oregano, crushed
1/8 teaspoon ground red pepper
4 carrots, cut in 1/2 inch slices
4 small onions, quartered
3 medium potatoes, peeled and cut up
3 (more) tablespoons all-purpose flour

Coat beef cubes with a mixture of 3 tablespoons flour and 1/2 teaspoon of salt. In a Dutch oven brown half of the meat at a time in hot oil. Return all meat to pan. Stir in the coffee, molasses, garlic, Worcestershire sauce, oregano, red pepper, and 1/2 teaspoon salt. Cover; simmer 1 1/2 hours or until meat is nearly tender. Add the carrots, onion, potatoes, and 1 1/2 cups water. Simmer, covered, about 30 minutes or till veggies are tender. Combine the 3 tablespoons flour and 1/4 cup cold water; stir into the stew mixture. Cook and stir till thickened and bubbly. Cook and stir for 1 minute. Makes 6 servings.

JD - this is on the menu at my house today - 'cept I am using a cooked brisket... Thanks for posting - will let you know how it turns out.
 
This looks great, I really love these type of stews. I think I'll hold this one for our first snow. Thanks for sharing!
 
JD - made this today for consumption later in the week. Big Al took a taste and told me it was so terrible he would eat it all and save me from it.:-P If it tastes half as good as it looks (and smelled) then I can't wait for supper tomorrow! Thanks for sharing this one. L-M

Can you replace the molasses with something else? I don't use much of that here, and wouldn't know what to do with the rest.

No worries - it keeps, or now you have a good excuse to make molasses cookies...
 
Cooked some of this (similar recipe) last week in DO on open fire. Came out great (w/o considering it was my first try). I love cooking outdoors!

I'd just leave it out if you prefer a little more savory stew...or add a tablespoon of raw sugar (turbinado)...that'll be close.
