• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Corned Beef/Pork Meatloaf (My new favorite thing in all the land)

Wasn't sure what I was going to make for dinner tonight then knew I had a lot of ground up corned beef and corned pork. Done some burgers with each recently and figured it would make a good meatloaf. Long story short it made an awesome meatloaf and the corning dynamic just made it so freaking amazing :biggrin1:.

As great as this one was it wasn't even smoked at all :twitch:. Since I have a gas oven at the new place I'm still playing with it and learning how it cooks. Got a convection setting I've been messing with.

Thawed a pound of each


Added an onion some garlic, a bunch of cilantro and some cheese. Also added a little curry and some extra pepper. Since both meats are corned it didn't need any extra salt


Roasted some purple potatoes



All done and plated up




After I ate my plate I started slicing it thin and I really can't wait till tomorrow's dinner which will be sandwiches made from the leftovers :becky:

 
That sounds curiously delicious! I wonder though, is it because I've been drinking? Have you been drinking? :mrgreen:

I would definitely take two or five slices of that!

Dang dude....my corned beef will be ready tomorrow, no corned pork tho, your adventures of food inspire me to break out and try doing new(to me) stuff.

Looks great, killer job.
 
The finished product looks delicious; but you lost me at "curry". I don't even like to drive past a restaurant that uses curry in their food. :sad:
