It's amazing what you can do with some leftover pulled pork, bbq sauce and a few boxes of Jiffy Cornbread.

I also did the same thing with leftover chili and grated cheddar cheese.

Comments?

looks killer, I have been doing a ton of cornbread on the weber lately and it comes out killer, looks like time to take some pork butt out of the freezer and try this!

That stuff is awesome! I did that a few years ago and man was it good. I totally forgot about that recipe!

Looks awesome Neil.

A meal in the pan. Now some Collard Greens and its a complete meal.

MrsMista just finished off the rest of the pulled pork cornbread. She said it got good to her and she couldn't stop. Luckily, I still have the chili cheese one. She won't attack that one because it has beans. Of course, she ate 2 piece before she figured out it had beans in it...

You okay:shock:

Nice work. That is definitely one for the "to do" list except I won't add sugar. Doing so would be grounds to revoke my Southerner card.

Mista, you have to be banned from coming up with this stuff!! LOL Man, that looks gooood! Good post.

It is unbelievable what you people do with food. I have more ideas than I know what to do with

I am so glad I found y'all!

That rocks, Mista! Making it tomorrow with brisket. What exactly did you do?

Looks great. Last weekend I cooked up some pulled pork hash, which I enjoyed, but this looks even better. I'll have to try it next time.

Mixed up 2 boxes of Jiffy Cornbread according to the instructions except I added a little sugar to the mix. Next I heated up the cast iron skillet and melted some butter in it. While it was still on the fire, I poured in 1/2 of the mix. Then I arranged a bunch of pulled pork in a ring on top of the mix. I squirted BBQ sauce all over the pork and then poured the rest of the mix on top. Then I stuck it in a 400 degree oven for 15 minutes. Simple.

Nice. I'm going to try it for dinner with some Chi Chi's sweet corn cake mix I have.

I take it the meat was cold from the fridge when you put it in the mix and was thus warmed during the cooking process?

You are exactly right sir! Heating it wouldn't hurt but it isn't necessary.
