Hi everyone.

I need advice on cooking times for squid fillet's and scallops? I want to be able to use my weber to cook them.
 
Do not know much about cooking squid..... Scallops though should be cooked about 1 - 2 min. per side until browned... on a hot grill....you do not want to over cook scallops...

Thank you T man. I know about cooking scallops but I didn't know how long.

I'm guessing for the squid it's about 2 - 3 minutes on each side.
 
Derek - you're times are right in the ballpark depending on the temps.. higher heat is good here. just look for that opaque/white color with a bit of char from the grill.
 
Derek, we grill squid often on our Weber. Squid either has to be cooked very hot and fast or very slowly. Anywhere in between and you got chewy tires. Over very hot coals you can cook 1-2 minutes one one side and flip and repeat. If you are grilling a thick body these times can be twice as long but if you score it with a knife (diagonal pattern) it will be quick. It is finished when it gets slightly translucent.

Hi Derek, for squid, scallops and shrimp I like a very hot grill and I will do just 1-2 minutes per side. They turn to rubber if overcooked. I tried squid for a recent "throwdown" a week or two ago. The problem I had with the squid is about half of them rolled up when I turned them, so I could not cook the other sides and they seemed a bit slimy (which some people didn't mind). The others were great. Next time I will run some skewers through them to keep them flat. Smokey Al Gold suggested putting a brick covered in foil on top. Landarc suggested a cooking basket. I think all would work.

Use high heat, and you'll get nice flavor if you marinate the scallops and squid; make sure you tenderize the squid with a good pounding with a meat mallet on both sides.

Depending on how large the scallops are, they should only take a minute or so a side on high heat. Squid shouldn't take much longer.
 
squid can be filleted?
Yes they must be a new item at miejers.

By the way, What's a cooking basket? I've ever seen one.

By the way will one full chimney work for the char coal? or will I want 2?

One full chimney should be more than enough. We grill them (both scallops and squid) hot and fast or grill them and add to a long simmering seafood stew.

Diva those look awesome, is that some lemon rind, how about a stuffing recipe, never stuffed them on the grill, just skewered and grilled.
 
By the way I'm wrapping bacon around the scallops, so they can cook a little longer.
