• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Cooking HALIBUT - Any Suggestions ??

I am going to be cooking Alaskan Halibut this Friday night for the members
of our Elk's Lodge.
We traded Texas Catfish for Alaskan Halibut with a Lodge in Alaska.
Now we are going to have a dinner.

I have had it grilled, baked, and pan fried. I think I am going to grill it.
It really is not a fish for deep fry but that could be done.

I was wondering if anyone has fixed it and if so, how was it prepared?
Was it served with some sort of sauce or anything special?

I've marinated it in beer & taco seasoning & grilled, then cut it up for fish tacos.

I,ve also made a mixture up of mayo - 1/2 cup; parmesan cheese - 1/4 cup spread on fish then top with Italian bread crumbs & bake.

Or marinate in soy sauce, worsterschire, garlic, cayenne then grill.

You definitely do not want to over cook this fish, it does get too dry.

I have had it cut into steaks, marinated in italian seasoning for 3o min, and chargrilled.

We had a small one and stuffed him with crabmeat and baked him in the oven. That was pretty good.
 
I usually grill fillets on the gasser...I rub them down with evoo, salt, and pepper. Put the fillets skin side down on aluminum foil. Pouch some apple chips and when the pouch is smokin' put the halibut on for about 10 minutes over med/high heat. Squeeze a wedge of lemon on top and pop the Chardonay! Halibut is like a blank pallet...you can flavor it very easily with whatever suits your fancy.

Not to be a smart arse, but my best advice for you is to not overcook it.
It is a canvas as mentioned and it is sort of like shrimp in that you can Bubba Gump it!:biggrin:
 
One of the best halibut dishes i've had was cajun blackened. I was AMAZED at how good it was.

Very easy to do on the grill too.

This is what we have cooked for exotic entree for two years in the local comp. Make a cold salt water brine, soak the steaks for an hour. The brine loosens the slimy film from the skins. Grill over pecan and you won't be disappointed.
 
Ive always gone VERY LIGHT WITH THE MARINADE ON HALIBUT... let the flavor stand on its own and overcooking will result in a death worse than habaneros and no beer!

Seriously Italian Dressing and ALDER work very well
 
last year I took home about 100lbs of Halibut Filets from my oregon fishing trip, my favorite way to do it is to chop up some macadamia nuts real fine, mix that with some shredded coconut and panko bread crumbs, then quick pan fry it o toast the read crumbs/macadamia. Served it with a pineapple mango relish, farkin amazing!
 
When I have smoked Halibut, we have sliced it up and made fish taco's with it!!
