• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Cooked a 9lb Butt in 5 1/2hrs

Butt went in the WSM at 8:15am, grate temp 302 let it go for 4hrs, then wrapped in BP, pit temp was 313, IT 162. Opened up the WSM vents to get the grate temp up to 325+ little over an hour later grate temp was 333 and IT was 205, unwrapped and checked for probe tenderness, wasn't quite there yet. Checked again at the 1:45PM (5.5hrs), grate temp was still 333, IT 213, the middle gave very slight resistance but on either side was like pushing through warm butter so I pulled it and let it rest in the BP for 2hrs. Checked IT it was 142 so I wrapped foil around the BP and a towel until dinner.

Pull apart tender and moist, wife confirmed it was outstanding.

Hot and fast, sounds like you nailed it. Proves you do not go by temp. to determine when done. Probe tender every time.
