• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Anyone want to share a good compound butter for beef? Been wanting to try some on some steaks and possibly some burgers.
 
I made this anchovy butter recently. Great on steak and will try on pork chop soon

INGREDIENTS

1/2 cup softened unsalted butter
4 minced garlic cloves
8 anchovies packed in oil, drained and minced
1/2 teaspoon hot paprika
1/2 teaspoon fresh lemon juice
Kosher salt
 
I take a couple sticks softened butter, add some chopped fresh herbs - thyme, rosemary, basil, parsley, chives, maybe a little tarragon... Whatever I have usually. Add a couple big cloves of worth of minced garlic, a little pepper and salt, and a couple tablespoons of Evoo. Put it all in a food processor till well mixed, roll in wax paper and put it in the freezer to harden.

I make compound butter with fresh thyme, lavender, rosemary and roasted garlic. Never put it on a steak, I usually work it under the skin of a chicken but I would imagine it would be great on a steak as well.

Not really a recipe, but for the first time I whipped this up for some strips on Mother's Day:

1 stick butter (softened)
finely minced garlic to taste (I believe I used two cloves)
1/2 tablespoon fresh rosemary finely chopped (can add more to taste)
small amount of dried thyme
black pepper

I put these guys in a small bowl and tasted as I mixed. It was awesome on steak, very silky
 
I make a Blue-cheese & Herb Compound butter that goes great with steak.

INGREDIENTS:
1/2 cup softened unsalted butter
1/2 cup softened Blue-cheese
1/4 cup loosely packed parsley leaves and then finely minced
1 tsp. dried thyme

Brown some mushrooms, blend them to liquid, and then cook them down in a little butter till thick.

Add this to a 1/4 or 1/2 lb softened butter. For the lesser quantity add 2T of sherry and 1/2t of thyme, double for the greater quantity. Add salt and pepper to taste. Put in fridge to re-solidify.

This is really good over steaks. It is a mushroom essence butter. Warning--it can look a bit nasty when solidified.
