• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

cold smoking or drying using the Bandera

Anyone tried this? My herbs have gone berserk(6' dill plant). I was thinking a little smoke in dried dill (for example) might be tasty. Also I have Salmon in the freezer. I remember threads about chipotle and grav lox but I seem to remember that was still done hotter than cold smoke (< 100)

I have checked the temps in the bandera "above" the heat shield and they seem to hold around 140, with 120 the farthest away from the shield (shield placement 2/3 up the chamber).

Don't know if this helps, but a lower fire, and lower heat shield placement might help you out. I don't know, just a thought.
 
I smoked a salmon in a cardboard box with an electric hotplate once. Turned out good. I would think you could rig something like that up to go real low and slow.

Here I am, inventing the "sheat sheild" and "fire baskets" to help me and my Qing brothers save money. Fark, next, I might be laid-off from the Brethren. :shock:

Then we will give you a gold thermometer, and thank you for your many posts. All while explaining that we just came up with some software that replies to everybodys post automatically, extolling the virtues of spam. And that you are no longer needed for this. And somebody created a stamped out version of a firebox, that, while not lasting as long as, or perform as well as, your homemade version, is still the proper solution.

You've just been outsourced and downsized all in one fell swoop.
 
Hey I beat Alton Brown by a few years. I did the salmon in a box when I lived in Idaho in 1988. The company I worked for would take all the managers to Washington salmon fishing. We did it 2 or 3 years and would usually limit the boat out by noon. We would all come home with 3 or 4 20 lb salmon. I used a hotplate with a thermostatic control and a tuna can for the hickory chips. Took like 2 days at 100 - 120 deg. Actually did it again the next year then the company got taken over by an investment group and most of us got laid off :?
