• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Cool...thanks. The smoker I am using is similar to a weber bullet, it's a vertical. I have seen some of the bandera's on your website and woudl consider looking into them if all goes well.

About the level of smoke...I understand how to control the temp with the vents, what controls the level of smoke? I am sure this seems like a simple question, but I would like to avoid the toxic issue, well, my wife did invite someone that...never mind.

btw, to answer the Bandera BBQchef33's question, I heard about you through a co-worker who has a friend who is into smoking, as you might imagine, I have been asking allot of questionslately
 
There are several ways to get "bad" smoke.

1) Wet wood-either green or soaked in water.
2) Closed dampers-most of us run our exhaust damper wide open.
3) Cold wood that has not ignited yet-most of us pre-heat wood by placing it on top of the firebox prior to inserting it.

Am I forgetting any?
 
I'll assume ya have and ECB or Brinkman Bullet smoker. Bill can help out with that better than I but we can apply some to f the techniques I use on the WSM. I load up the WSM with more wood than most, probably a little less than half is wood...... and the rest kingsford. I let the cooker clean up its smoke by letting it run a while before putting in the food. This can sometimes take near an hour. I run wih all dampers wide open till temps reach 275-285 and then crank them down to about 1/4 open. In about 15 minutes temps have dropped to 230-240 and you have clean clear sweet blue coming out. Also, instead of just laying the chunks on top of the charcoal, I scatter it throughtout the pile of coal at different levels to ensure there is fresh wood lighting as the coals burn down. This may give you some visable smoke at times throughout the cook, but it burns away in a little while.

If I don't have the cordless or cell outside while tending fire the better half takes a message. "I'm sorry, he's outside playing with fire and I'm afraid to call him in. Can he call you back?" Works for me.

Speaking of fireboxes, I have yet to have my paint peel off. The Dera has had three really good cooking sessions as well. Maybe the folks over there at NF are finally using some good quality paint?!?

LOL - watch when I fire up the smoker for Labor Day my paint will peel off.
