• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Usually I hot tub these but not this afternoon.

Injected with wort sauce apple juice black pepper garlic and herb powder.

Rubbed with kosher salt, black pepper and hot New Mexico chili powder. A couple of deer meat fatties hiding (thawing) in the back.

Gonna smoke them till they are really soft and mix up the onion, garlic and japs into a paste and stuff one of the fatties with it. Just gonna do onion and garlic for the rest of the family.
They cant stand the heat.:wink:

Looking good. I wonder how the venison turned out? Is it pretty lean or a lot of fat added. I like venison!!
 
I did some out of the same batch last winter. They came out really good. They added some pork fat when they processed it. I didn't stuff those.

The fatties were a different story. Both packs were marked "Breakfast Sausage" I didn't take pics of the first one I was going to take pics of the one with the japs in it. Well the pack was mis-marked. It was 6 little steaks. I just made some stackers out of them.

Damn that looks great! I didn't quite get the results you did, but I got something to shoot for next time now that I know what it's supposed to be like.
