As promised to Norco, the next project. Christmas cook is early due to we have to travel (only 1 hr). What you see is one 11lb ham with Sloppy's rub, glazed with honey and raw sugar next is a 7lb flat marinated overnight then rubbed with Spices Heifer dust and raw sugar. Will smoke for 3 to 4 hrs then basted and wrapped for remainder of cook.
