• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Could not locate a cane sugar DP. However did have Mexican Coke, it's made with cane sugar. This is the last of my Ozark Oak. A proper cook for a great product.

A really good bark. Added the real Coke to the bottom of the pan and covered the Shoulder with chipotle salsa. Check it again in a few hours. Primo running 300, going to dial it back 25
 
Now, that is a butt that grabs my attention. I remember being told that Dr. Pepper contains prune juice. Coke plus a smidgen of prune juice might approximate DP, no?

No sir. The liquid never covers much, maybe 25% at most. Fat cap is down the entire time. Start with real sugar cola. As that is evaporating/condensing- then add broth to keep the liquid level st 25%- at that point the fat is rendering (5-6 hours) and let it ride. Baste often or foil it up till the bone wiggles free estimate of 8-10 hours- pigs 🐷 vary. Save the juices to mix some back in when you pull and store. Remaining juices we freeze and drop into soups-stews beans etc.

looks amazing and nice twist on the same ole PP.. Do you add the peppers and pop when you get the bark color you desire?
 
I've actually done this "wife's hairdresser recipe " several ways. This time I seasoned really well and smoked about 2 hours before adding the soda. Guessing two hours later added some broth to keep liquid at or near 25% as my Primo was running a tad warmer than usual. I need a new gasket-bad. Anyway I try to do this 240-275 and she was wanting to run 295-315. We are watching Miami Vice reruns on Hulu and I didn't fight the temp. Let her run.
 
I have cooked the Chipotle in Adobo/Dr. P PB inspired by Adams in the past and have to say it does not suck. I have 2 cans of Chipotle in Adobo sauce sitting in the pantry, might be time to get another Butt.
