somebody shut me the fark up.
Poker Birthday Potluck at the bar again and I wanted to make something different. As usual, Facebook to the rescue when I saw a post with a bunch of different flavors of meatball. Settled on Chipotle Chicken, Bacon, Cheddar Cheese meatballs. I followed the following recipe very loosely, meaning I looked at Rachel Ray a lot and the recipe a little.

I prepped and mixed all ingredients except the chicken so I could get them well combined, then I added the ground chicken and gave it a light mix. I let that marinate over night and then rolled and smoking them today.
Made 90 of them and had some meat leftover. Cooks Prerogative! Made some patties and smoked them up. Served on a store bought, Sourdough frozen roll, with Stubb's Spicy and Monterrey Jack Cheese.
Not bad.
