• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Poker Birthday Potluck at the bar again and I wanted to make something different. As usual, Facebook to the rescue when I saw a post with a bunch of different flavors of meatball. Settled on Chipotle Chicken, Bacon, Cheddar Cheese meatballs. I followed the following recipe very loosely, meaning I looked at Rachel Ray a lot and the recipe a little.

I prepped and mixed all ingredients except the chicken so I could get them well combined, then I added the ground chicken and gave it a light mix. I let that marinate over night and then rolled and smoking them today.

Made 90 of them and had some meat leftover. Cooks Prerogative! Made some patties and smoked them up. Served on a store bought, Sourdough frozen roll, with Stubb's Spicy and Monterrey Jack Cheese.

Matt, they are semi disposable trays the they sell at HEB for .99 cents. If it looks like I can clean them, I try. In this case, I'm tossing them. Not worth the effort.

Thanks! Yea sometimes 99 cents isn't worth it. They would work great for Abts and pig shots
 
I got some at wal mart, it think it was a 3 pack for 3 bucks or so. So far I have been able to wash them

Well, all but about a half dozen of the 90 I made got ate. Different comments. Some loved them (too kind), some liked them but thought they could be better (I agree), I didn't hear of anyone that didn't like them at all, so I guess that's good. I think I would change the meat to filler ratio a bit. I did 5X the recipe, five pounds of ground chicken, and followed the recipe (X5) as to the bread crumbs and water. I think I would do 6 pounds of meat and 4X the bread crumbs and water. They were a little runny raw, but I put four small cans of chipotles in it, so that lead to part of that.

Overall, I'll make them again, one of these days, but not in a rush.
