• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Chimichurri skirt steak with chorizo stuffed bell peppers

Somewhere in this thread I hope to eventually get my PBC contest entry pic. After trimming, I seared the chimichurri marinated skirt steak then fileted it. Added pepperjack cheese and a finger of chorizo then rolled it.

Bell peppers got a thin layer of rice to absorb juices. White onion petals lined the pepper walls and stuffed with the steak and chorizo rolls. A spoonful of chimichurri to top it off then onto the PBC grate.

Hell yeh,that's a moorish looking feed
 
This worked out better than I thought it would. The top half has tasty steak with some nice charred edges touched by some smoke too. Then the bottom half with the rice that cooked in the steak and chorizo juices mixed with melted pepperjack was delicious!

Wow, Jb ... you really got your creative juices flowing (along with all the other delectable juices flowing in that dish)! It all looks great, and it may well be copied by ... someone <ahem> ... in the future!

Thank you, Thing! I would prefer some heat in the pepper, but size did matter. Large poblano maybe? What would be other options for heat?
