• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Chicken Wings On The Shirley Warmer Tonight

made some chicken wings in the Shirley warmer tonight and this is how I did it and cooked at 300 degrees .

I removed the plate out of the warmer

rub down and going on the warmer to cook

fire I had going in the fire box

dampers set and had the main chamber damper shut off and both main and warmer were reading 300 degrees .

Those look fantastic!

You smoke 'em up then toss in sauce (my preferred method), or do some combination of the sauce & not while in the warmer?

yes I smoke them up , warm my sauce up on the stove and then to a foiled pan for 30 minutes
 
Great looking wings! And yet another exhaust / damper combo that we can use to cook in the warner and cc. I'm beginning to think there isn't a wrong way.

i am confused. How is the main chamber at 300 if the damper to the fire box is closed? The majority of the heat would draft through the warmer. Even if both stacks were open, would that much heat get in the main chamber with no draft on the far end of the main chamber? What am I not seeing here?

use 1 cup of your favorite BBQ sauce , 3/4 cup of honey , 3 tablespoons of apple juice and heat on the stove for a sticky wing sauce

with the main chamber shut off the radiant heat still got the main chamber to 300 degrees

you cannot close off the main cook chamber unless you have one of those new pieces you stick in the fb to block it off. he had the damper from the main cook chamber to the warmer closed so there was probably some "pull" from the exhaust stack on the main chamber. hope that makes sense.
 
Those wings look great. I think I'll throw some in tonight after I finish the seasoning/curing. Tyler made me a new style block off plate for the main chamber. It is a steel plate with a handle that drops in on the left side under the bottom grate to cover the baffle opening.

I had originally seen JasonTQ's...... So I had asked Tyler to make me one. The one he has blocks off the baffle from inside the fire box. When I went to pick it up, Tyler said he built this one instead because he felt it would work better. Who am I to argue? I'll get some pics when I can.
 
here is another pic , I left the ash pan in to catch the dripping and to deflect the heat a little .

I also ordered the ash pan for the warmer box. I did it for a few reasons..... One was so I could cook in the warmer with easy ash clean up/out. The second was to use as a heat deflector when opening the damper from the fire box. The third was to use as a catch pan for grease/drippings.... Again to make cleanup easier. However.... I noticed today that it is only 'stitch' welded, not continuous. So, I guess I'll either have to line it with foil or take it to have it fully welded. Not a big deal either way.

on thee charcoal pan I just put foil on it for a easy clean out .
