• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

What's going on with chicken prices? I was at Winco today and bought two family packs of wings when I noticed that you could get Two family packs of drumsticks for $2 less than one family pack of wings.
The bad thing is I'm the only one in the family that will eat drumsticks.:cry:
 
Back in the day, when I was kid, nobody really wanted wings and you couldn't hardly give them away. Now they are much more prized by restaurants over legs, thighs, and quarters.

That said, chicken is still relatively cheap (compared to other meats).

Sounds like if legs are cheap, you have ample opportunity to practice (and bring your family around to them). A few years ago, I was asked to bring a dish to a July 4th outing and decided to try chicken leg lollipops. I first sampled them a few years prior, stuffed with pork and they were absolutely amazing! I cooked mine with a standard trim, rub, and glaze at the end. They were an absolute hit. There are some tricks to trimming and making them, but they are delicious!
 
That's how it's been for years (and years): Thighs, drums, and leg quarters can often be found for $1/lb or less.


Lollipops may work, but I've had best results by simply overcooking them to the point they are finally starting to dry out. I'm talking 3+hrs at 275 for skin on. At this point all of the tendons should not be an issue, and the meat should pretty much be all smoke-ring.
 
I go with thighs for .99 lb. and use the bones for stock. Yeah, since wings became a thing (rightly so) they are not so cheap. :sad: All former trash cuts have been 'Hipsterized' and gone off the charts (Flap Meat, Flat Iron, etc.) Even brisket itself...although I AM in Texas so...

Agreed. I blame the Food Network and all those stupid cooking shows. When a skirt steak costs more that a ribeye....well, people are stupid. It will all come back around.
