Chicken en Mole/Scrambled Egg Taco

for breakfast. Getting in the mood for Cinco de Mayo.

Local tortilleria had this in stock.

After looking at the ingredients, I knew I had to give it a try.

Cooked a chicken.

The concentrated mole.

Thinned it with 28 oz chicken stock over medium/low heat.

Shredded the chicken and added it to the mole.

It's been real delicious. Made several dinners/lunches with it served over white rice. Lots of leftovers.

Makes a great breakfast taco.
