• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Despite the weather this weekend, the smoker is running like a champ. Spent about $10 to fill it up today. Got turkey quarters to go into tamales. Pork hocks and neck bones are going into the crock later with great northern beans.

Pork hocks are naked. No rub, salt, or spices at all.

Pork neck bones have Willie B's Bourbon rub.

Turkey was prepped with a modified mustard & Blues Hog Tennessee Red slather. Molassis was added as a sweetener. Willie B's Bourbon rub to finish it off. Before using the slather, I pulled back the skin on the legs and thighs. I also removed the membrane underneath the skin on the legs. Slather was added and skin pulled back over the legs and thighs.

That all looks great, Todd! That's in a Traeger? Stay warm.....and safe. Looks nasty out thattaway.....
 
Everything's done. Put the neck bones and hocks in the crock. Will let the fat render a little more and then add my beans and sauteed onions.
