Marinated for a couple hours with EVOO & Pellet Envy's EAT Barbecue Zero to Hero rub, I really like the flavor of this stuff. Anyway, in the fridge for a couple hours, then onto the SM BGE for a nice sear.
Pulled at 145, and given a bit of a rest.
Served with brown rice and veggies, this was probably the most tender & juicy chop I've ever had...delicious.
