It looks like the GrillBillies may have their first 'paying job'. My partner's boss has approached him with the possiblity of us catering a event for his company. 150 people, two meats (pulled pork and chicken) two sides (baked beans and cole slaw) and possibly dersert (if we do it, it will be something simple like cake).

I'm thinking $12-$15 a head is a good price for the requested menu. If we supply paper products and serve it $15 a head, if we just cook the meat, sides and desert and drop off, $12 a head.

Does my pricing seem reasonable to you guys? Any suggestions would be greatly appreciated.

I would do the drop off thing let them provide the plastic ware and plates, and a sheet cake will fill the bill, maybe ice cream??the little ice cream serves one carton??

Ya, I'd probably rather do the drop off, but for the right money I'll serve all day long. Do you think I've got a fair price?

Remember your not yet a BBQ joint so you don't have it on hand already, you have to go shopping for the food and spices and cook too, so don't sell your labor cheap, all I can say is make it good and have cards placed out for future buiseness prospects..another thing is insurance make sure you have it here in Oklahoma a million dollar policy is 700$ a year

I am curious to know, when we call looking for insurance what exactly should we ask for? I know that sounds like an ignorant question, but I am just not sure what type of policy we would be looking/asking for?

Sorry but I have to disagree

Sorry I have to disagree on letting the customer provide the Plastic ware plates ect (Its Suicide waiting to happen). There are many grades of plastic wares. There are some you get with fried rice that couldn't pick up a thing to others that my grandmother would use and wash and reuse again and again. What will almost always happen is the company organizer that you will work with will try to save a dime and go to the local dollar store and buy cheap plates ect. The day of the event this stuff will miserably fail. Guess who they will look at? The people providing the Q.... Go and get it yourself and get the good stuff. It will pay off in the long run with more events and not disappointment of people thinking your cheap. The other thing is if they see cheap wares the food critics will most likely bash the food thinking its cheap too. Just MHO..

Dishware

I'm gonna have to agree with you Ashmont, people will go through great lengths in being cheap and buy the most flimsy of paper plates and plastic ware, but that would have to be a charge in itself and another consideration on the per person charge and the insurance should be a general liabality insurance for food and handling and service, plus alot of states want the food to be prepared in a certified kitchen or on the spot, the only thing I can recommend is to contact your local health dept. and ask for the rules and regulations in your area and what is the minimum and maximum liability insurance to carry

Here is our pricing. Adjust regionally. We are usually not the cheapest, nor the most expensive around here. 4 Ounce portions. Remeber, the more they pick, the more you make, as the portions can shrink somewhat.

(Delivered, set-up buffet style, served, cleaned up, with you retaining all left-overs. Also includes tea and / or coffee, bread, buns or rolls, condiments, disposable dinner ware).
