• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Hey guys just finished up that huge taco catering job of 400 people in two shifts. I got to tell you I made many mistakes. I ran out of rice and beans at the end. I had people serving themselves and piled on the food, I also ran out of salsa, (I had 4 gallons of homeade red salsa) I used my ranch kettle to cook on, I could have used two of those bad boys. Anyway thanks for the advice it was a good pay day. I am tired sore and sun burn (no easy up) I also need to invest in a catering hot box it would have saved me time.:eek:
 
As soon as you can write down what you did for this job so you have reference for your next gig.
 
I have always practiced overkill. You can always buy extra and take back what you do not use. If you cook it, you can always freeze it too.

I am glad things worked out for you. Make sure it stays fun or it will be twice the chore. You did a great job feeding all those folks.
 
yup,i'm with you overkill is the way to go.. i even practice overkill when cooking for my own family..that way when they pay you for the job.. you know their not going to talk chit to others. that you ran out of food..thats how you learn next one will be better good luck on your catering....
 
Ditto on the over kill, It might just be my grandfather's upbringing. But no one and I mean no one home or gig walks away hungry.
 
I'm a project manager so I am used to "padding" the estimates to make sure I have enough! :-D

I just did a cook this weekend and I know I cooked more than needed. Hey, the guests have leftovers to share with their friends. And when their friends want some too, then they have my business card. Just a little marketing expense! :-P
