• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I'm cooking cased sausages (2 kinds) for the first time on the smoker. What internal temp should I take them to? THe same as fatties - 165?

Doing some almonds and a half a pork loin as well. Yum.

For hog casing sausages I smoke them for 3 hours at 185 or about 2 hours at 235. I don't go by internal temp... just when they are pretty firm. The best advice I have on sausages is don't over smoke them. You can always cook an undercooked sausage some more but you can't take away too much smoke. Really try to keep sweet blue!!!
