• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Cut 3 Chops out of this ,they came in around 2,lb each/1,kilo.

Made a BlackBerry sauce to go with it.
reverse Seared the chop. was delicious.
Smoked for one hour using Acacia Pods then charred on the Go Anywhere

Roughly,
Two chopped onions cooked down two or three times with butter and chicken stock until it's almost a roux
Add a cup or two of red wine and reduce by half
Add two cups of blackberry and cook down ,maybe an hour
Add a inch of butter and a cup or two of more stock
Cook that down then strain
Cut the bitter with enough honey to taste and your good to go

Cape grim beef is grass fed in the hills of Tasmania
Only stress the have is chewing in high green grass walking around water supplies to get to it
The briskest are usually oxen, tasty ,very great floppy texture
The air in Tasmania is classed as amazingly pure and the cattle are all treated with the respect they deserve.
Free range,pure beef
