• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I know I make these too often when camping. They are easy and tasty. Last time was beef ribs, this time spares.

used the tractor rim...

Soaked some pintos overnight..

slathered and seasoned the spares...bacon drippings, S&P

Figured on 6 hours of slow cooking over the low heat side of the fire..

started the beans in water with bay leaves, marjoram, red pepper flakes, garlic, bacon and onion.

trimmed some meat off the spares to put in the bean pot...

just flipped and rotated the ribs, added liquid to the beans and a log to the fire when needed...

when the beans were tender, I added chicken stock, salt and pepper...

last was corn on the cob. A couple bacon wrapped and a couple of regulars..

Full spares are my favorite form of pork rib! They've been on special for weeks around here (Raph's for you SoCal farkers) for $1.99/# for good quality stuff and I've been eating 'em!

I took a cue from you yesterday and did the bacon drippings & s&p deal and cooked 'em on a rotisserie & loved them! I still wanna do open pit like yours - that really looks fantastic - & along with the beans and the setting and no doubt the company, I'd say that's about as good as it gets right there!

Greg, thank you!! :hug: I saw a pic of the rotisserie ribs you posted in wp, they look killer!! Glad the bacon dripping worked out for you. I put it on everything. Not sure if it makes a difference, but it's the thought...kind of like putting tequila in my chili. :becky:

Had a great time at the lake, even though the fish weren't biting. Did a lot of campfire cooking, it felt great.

How was the fishing?

The fishing was terrible Big Joe! Didn't get one single bite. A guy stopped by and said his wife caught one crappie on the other side of the lake.
I just did a lot of cooking and relaxing. :grin:
 
Cowgirl looks delicious, I wish you were closer you could camp with my Scout Troop and try and inspire them. We have them cooking in Dutch ovens a little more often but the are always trying to take the easy way out.
