• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Caja china has arrived!

Got it last night, 45 minuted later assembled. Now I have to get some meat to cook. Nothing to cook up on it other than the wife's cat. Planning on some shoulders this weekend will post pics after the first cook. If I can't wait the cat might be good enough.

Congrats!

If you can, put a remote prob in the shoulder and run the cord out of the lid. When I did shoulders a couple weeks ago I followed their instructions instead of trusting what the prob temp said. It was done, but not fall apart tender like I usually want shoulders. You probably need to add more charcoal as well to account for a slightly longer cooking time.

Tip #2, don't open the lid to peek, except after that first hour when it says to flip it skin side up. Otherwise it loses all of the heat/pressure and you waste about 15 minutes quality cook time.

Last tip, wrap the bottom drip pan with foil. Makes clean-up a heck of a lot easier. I find those Clorox disposable wipes clean the inside fast and well.

Enjoy!
