• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I'll be throwing a few butts on tonight. The park manager asked me if I would smoke some pulled pork for the park picnic on Saturday. They are expecting around 50-60 people. Ninety percent of those comming will be at least 70 yrs. old and they are also serving chicken plus it's a potluck. I thought I should probably smoke 20-25 lbs. (raw) of meat. This is the same guy who started me on my house search when he said I needed to get rid of my stainless steel table I have as part of my outdoor kitchen!
 
I'd say that's about right, Neil. You might be able to get away with just two big butts.
 
Always, always, always cook more than you will need. That way you will have some leftovers. :D
 
90% over 70? You chosed right in making pulled pork. Dentures not required.
 
40% loss in shrinkage and bone weight is going to yeild about 12-15 lbs of finished product. At a 1/4 lb serving per person, this should feed 48-60 people. Now, if your pork butt is better than the chicken, I'd say you'll run out about person #36. I think, if it were me, I'd cook one more 8 lb butt. :mrgreen:
 
Just wait till somebody sees the smoke ring and tells you the pork isn't done!! :D

Unless somebody else is paying for the meat or you really like these people I wouldn't cook any more than what you've planned.

Now, if you like 'em I'd cook more like 40# raw pork. I just did pulled pork for about 70 people - the church was paying so I rounded up and cooked 6 butts (about 52#). We fed everyone and actually sold 3 quarts of pork :D There was enough left for the staff to eat on Thursday.
 
I have 5 butts in the 'dera. Not sure total poundage, I bought a case at Sam's Club for $1.20/lb. 4 cryopacks-2 butts ea.-53#'s total weight but the butts are not equal. Injected with apple cider, splashed with dale's, yoshida's, worstey, and horseraddish mustard, then rubbed with rub.

That will be way more than enough. Enjoy your leftovers. 8)
 
Everyone loved the butt. Kinda sounds like lyrics to a rap. I pulled the first one off the 'dera at 9:30 and started pullling at 10:00. Got the meat over to the picnic at 11:45 and they started chowing at noon sharp. There was probably 3-5 lbs. of pulled pork left over. The owner of the park kept the leftovers which is ok since I don't have room for it anyway. My fee was the remaining 3 butts in the case and 48#'s of Kingsford.
