• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Bought some butcher paper from a craft store. Said butcher paper on it and also said food grade. Only thing is one side is paper like and the other side is kinda slick maybe like parchment paper? Is that the right butcher paper. It's not waxy like I've seen. What do you guys think?
 
I don't think that is the right paper. It shouldn't have any wax on it. I buy mine at Gordon Food Services. It was called Butcher Paper and was 18" wide x 1000' for $20, the last time I bought some. It is relatively coarse paper and has no wax coating.
 
It doesn't have wax it just has a paper side and a slicker side like parchment
 

i bought some of that and it is not the "correct" bp but it will work. it's more like freezer paper so i don't know how well it will breathe but since it is food safe it shouldn't give off any odd flavors or kill anybody. if you ever find the right stuff make sure it is wider than 18". i have the 18" wide roll and it is a pain to use on briskets if they are bigger than 10LBS. it just isn't wide enough.

Smaller rolls can work but it may take 2 sheets. Just overlay them some and wrap as normal

I think this is what a lot of folks buy. They also sell is in 24". Not sure if you can find it somewhere locally. Been meaning to order some myself but don't do brisky's often enough hasn't been a priority.

I get mine at Costco or Sams in the food section. I'd be hesitant with anything from a craft store, not selling food items.
 
What you have is freezer paper. It is a type of butcher paper. It is made for freezing meat or fish with the shiny (coated) side touching the food so that water or juices from the food do not penetrate the paper and make the paper stick to the food as the it freezes.
 
Found a local source that can get me a roll of 900 foot tomorrow for $38. It's the best I can do in such short notice. And it's local. Paper on both sides no wax coating. Thanks guys!
 
That's not a wax, freezer paper has a plastic coating on one side.
