• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

WooHoo...I'm stoked! Happy Halloween to me:-P:-D:biggrin:. It also came with a cool catalog...I can get in all sorts of trouble now:twisted::twisted::twisted:

You'll love it. Just be patient though, and give it a full ten days at least.
 
Just a note for fellow do-it-yourselfers, I just sliced up my most recent batch of buckboard. I made my own cure. Morton tenderquick and brown sugar, 50-50 mix. After I cured it (14 days) I rinsed, triple soaked in a cooler with water and ice. I changed out the water after one hour. I tied them up and injected with 50-50 mixture of Maple syrup (real) and water. Smoked them with apple chunks. One of my best batches yet.

That sounds completely do-able!!!
 
Joe, if you look at the box, its tenderquick,brown sugar and some kind of powdered maple sugar along with some anti caking stuff.
 
I got my cure last week and did two butts yesterday. After boning the were 5.5#s and 4.5#s. Pork loins went on sale yesterday so I will probably pick one up today for some Canadian Bacon as well.

I can't wait to try this stuff!!!

Yelo - I'd be interested in more specifics of your DIY... Particularly how much of the 50/50 rub do you use for a butt (a Tbs, a cup, a pound?) Guessing you rub it, wrap it and fridge it for the 14 days. Also, how much liquid did you need to inject (roughly) Thanks in advance!!!

I used it in the same amount as the Hi-mountain rub. Place in a gallon zip lock bag as put in fridge for 2 weeks. I use 3 cups of mix (1 1/2 syrup, 1 1/2 cups water) for 25 lbs of bacon.

I don't think they allow that in Az. I might stop by next week on my wat to the comp at Rawhide. Do you mind if my dog uses your parking lot while I charge a coke ? :twisted:

Not a problem, as long as you don't mind the neighbor kids siphoning your gas/diesel and painting your vehicle!!!!
