• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Thanks to Thirdeye for the help to get my first attempt at Buckboard Bacon done to perfection (My humble opinion. )

...... terrfic looking job! ..... especially the slicing!! I have a ways to go. Next one for me is going to cure for 12 days (just to see what happens) and I'm trying the elecrtic meat slicer.

How did you slice yours?

Just ordered some cure, I can't wait for it to come in so I can try it. I think I'm gonna try a loin and butt so i can see which I perfer. Maybe even slice the butt in 2-3 inch thickness and make a peppered one too. Hmmmm so many good choices...
 
Anyone know if this stuff is sold around here in central MA???

High Mountain Buckboard Bacon Cure

$9.00 for s+h on 2 packages seems real high, this stuff must weigh a ton.

If you have a Cabela's around they might have it, or stock it if requested. I've picked up Hi-Mountain kits at the Ft. Worth store before.
 
I used a $99 dollar slicer from Bed Bath and Beyond worked great if I sliced across the butt however was to short a stroke to do it lengthwise. I cut the first one in half made virtually two squares then sliced from end to end the second I sliced form side to side looked as good ?

Joe I deboned two butts and they seamed to either shrink or swell to where they acted like the space where the bone was had filled up?
