• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Well here's another shot at using my WSM for an overnight smoke. Hopefully it'll turn out a little better than last weekend. Instead of trimming it to fit the grate I just left it folded over slightly on the thin end. It came out of the fridge that way so we'll see how it goes. I'm using the last of my Old "K" for this one.

Sorry no picks of the before. I'll make sure I get a few of the after.

Pray for me Brothers, I really want this one to turn out, or at least be edible.

Sorry, Got busy and hadn't had a chance to pot. Brisket turned out pretty good. Butt turned out even better. I didn't inject the Brisket this time but it didn't get too terribly dry. I pulled the butt at around 11am Monday morning after roughly a 13 hour cook. I put the Butt on at 3am and pulled it around 12. I coolered them and got busy. Didn't pull either of them until late last night. I cut up the brisket at around 8pm. It wa pretty good, still real warm, decent bark. I think I'l try a different rub next time or maybe try it mixed lightly with alot of juice and injected. The butt was great. I injected with rub/juice and rubbed well the day before and just before putting it in the smoker. I lit the smoker off around 8pm on Sunday night and It still had heat at around 215* all the way through until 5pm Sunday. That was with my last batch of Old "K" so I guess I get to start playing with the new stuff and see how it does.
When I get home and have a chance, I'll get the pictures posted.

BTW Tim. Thanks for the Pep talk Sunday Night. It helped alot.
