• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Ditto on the ring. Nice and pink and deep. What was the temp of the brisket and was the smoker up to temp when you put it on? I find that if I take the meat right out of a good cold fridge and have the smoker up to temp, I get a nice ring like that. Good looking bark too.
 
I had the brisket out and on the counter for a little over an hour. It took a very long time to get the pit up to temp. I put the brisket on at about 225 degrees and smoked for 6 hours at 225 to 250 over lump mesquite and hickory splits. Foiled after 6 hours(temp at 170) with some bbq sauce and left in the foil for 2 hours (temp to 185-190). Took out of foil for the last hour and removed and foiled again to rest once temp hit 200. My best ever.
