• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Brisket over cooked

I tried the foil boat method for the first time last week on a choice brisket from Albertson’s ($1.97/ lb). Cooked on Weber Summit Charcoal at 230-275 F. Foil boated after 4.5 hours and temp was 170ish. Temp in Weber climbed ans high as 320 after tinfoil boated. My 9 lb (after trimming) brisket was out of the smoker after 6 1/2 hours with a temp of 201 to 210 depending on where I probed. Was worried the thin flat was overcooked. It went directly into a 150-170 F oven to hold for 5-6 hours still in the foil boat.

It was awesome. Flat was perfect. Even the thinnest part. Bark was great.

What am I going to do with all the butcher paper I bought?

I highly recommend the foil boat based on my one try.
