• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Brisket for Mother's Day!

I just pulled it off the WSM. I foiled it at 165 internal.

It's wrapped in a towel and in a cooler now. Not sure yet how probe done feels but the probe went in very easily and everywhere I checked it was 198 to 201 ish.

Sorry I didn't get any more pics ... I tried to take one at about 3:00am but my digi camera's battery had died. Charged it up with the intent of taking a pic prior to wrapping it but forgot.

The WSM performed amazingly. Beyond expectations. After it locked in to 225 (took about 2 hours for me to get it stable after adding the brisket) it was solid all night.

I napped a bit here and there in my recliner ... lol ... next time I'll have no problem trusting it to just run and run and run ...

Once I slice it I'll get pics of the finished product.
 
Well it was a hit with mom and daughter! I thought it was awesome myself. Ended up taking just over 11 hours to cook.

I cooked it fat cap up this time ... next time it will be fat cap down. I used the water pan so the non fat cap side being down didn't bark up that good, but the fat side did.



The WSM performed amazingly well. I am VERY pleased with that decision!
