is one Smokin' Farker
If anyone saw my last thread on brisket flats... http://www.bbq-brethren.com/forum/showthread.php?t=219124 , it was not bad but not my best. I got the problems corrected on my Traeger and had 3 more flats to cook for a lunch at work this week. These flats were $3.49 per pound. Got started yesterday at lunch.
Kosher Salt and black pepper, ready to roll.

After 3 hours, more Mahogany than black.

Waiting for a madman with a knife.

Pretty nice result. Good flavor and decent chew. I am much happier with these results. Thanks for looking.
