• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

So, got a call for an event. Looking at doing Brisket and Pork for 500 buffet style with sides. Question is how many briskets do you think? I did an event a few weeks ago and did 5 for 200 but also had fish at the event. If I can average say 15lbs a brisket I was thinking around 10? Yes, I know total cooked wait will be a lot less, but trying to figure 1/4lbs of brisket each?

Any input would be great.
 
By my calculations just under 15 briskets that weight 15lbs each would give you 3oz per person. Looking at some of my notes that I keep we've gone through 70lbs raw packers for 120 guests when served with pulled pork as two meats. This is buffet style and guests serving themselves also. It's been stated here before too have someone carving and give a slice and a half per person and you will go through way less.
 
I agree with hbmtn. 15 packers at 15 pounds each will be the right number.
