So, got a call for an event. Looking at doing Brisket and Pork for 500 buffet style with sides. Question is how many briskets do you think? I did an event a few weeks ago and did 5 for 200 but also had fish at the event. If I can average say 15lbs a brisket I was thinking around 10? Yes, I know total cooked wait will be a lot less, but trying to figure 1/4lbs of brisket each?
