I was looking on here the other day when someone had a recipe for a brine they used on chicken. I think it had a gallon and a half of water, kosher salt, celery seeds, and a few other things. If anyone knows which thread it was I would appreciate finding it again. Thank you

1 gallon water
1 cup sugar
1 cup kosher salt
1 table spoon black pepper
1 table spoon cinnamon
1 table spoon allspice
1 teaspoon nutmeg
1 teaspoon red pepper flakes
1 small onion diced
3 cloves garlic diced

Thank you huckjr, this is the first brine recipe that I have seen using nutmeg. The one I was looking for had brown sugar in it. I have tried using the search here but I haven't had any luck finding the recipe I saw a while back. Anyway the chicken is in the frige just waiting for the brine and I'll keep looking. Thanks again
 
Here's what I use.

Chicken Brine

This will work for one 4-5 lb chicken

1/3 cup canning salt or Kosher alt
1/2 cup brown sugar
2 qts cold water

Optional
Soy sauce
Vinegar (Red Wine)
Hot sauce

For whole chicken brine for 12-24 hours. For parts brine for 2 hours.
