For the "Let's Smoke a Fatty" throwdown ( https://www.bbq-brethren.com/forum/showthread.php?t=286199 ) I decided to trysomething I had never done before.
I started by boiling some brats in beer.
While they were cooking, I shaped some breakfast sausage into a square about 1/4th inch thick and sprinkled some Hardcore Carnivore Amplify on it.
The I made a bacon weave on some wax paper.
I wrapped 2 of the brats with some freshly roasted and peeled green chiles and put them end to end in the center of the breakfast sasauge.
I put some sharp cheddar around the brats and rolled it all up and sealed the ends and the seam.
Then I placed the fatty on the bacon weave and rolled that up.
I put it seam down on the grate of my drum smoker and cooked it at 250.
I pulled and rested it when the internal temp hit 165.
