No pics yet, so you can yell at me now. I was bored today and opened the freezer to find two chuckies i bought a little over a month ago from costco. I never thought i would lose food in the freezer, now its found.

Now the boredom really comes with my idea of my UDS and a WSM. I have been trying baffles, different configurations, anything i can do to try something new. Today I added a rack just above my fire box and took my brinkmann water pan and filled it with water. I want to see what a WSM smoke tastes like. I have always wanted one, but i opted for the price two UDS would be a steal. They have been, but when a boy wants a toy he will always want that toy. Now i have a WSM/UDS and im giving it a try. Ill post my experience with my non traditional UDS.

I haven't tried chucks on the UDS yet hows it done properly

Im learning and modifying and learning again. I thnk its supposed to be taken to 165ish then foiled to 190ish. Rest in ice chest then pull. I sure hope that is how its done, because that is how im doing it. Oh yea, i have beef ribs too.
 
So far so good. A little over an hr and 30 minutes into the smoke and ive held 275° +/- 5 degrees just fine(stoker assisted). The taste is the only thing im worried about though.
 
Chucks drive me insane, last one I did ended up tough as all get out but, that was a very mad scientist experiment that should have most likely never been attempted. Can't wait to hear the results as well.
 
Ruined.

The meat is tooooo salty. I think i might be able to save it and throw it in chili beans, but i will not eat it. I dont think ive said that much about food, but this is not edible. Never again will i use a non brethren approved rub.
