OK, so I’m am in the camp that the only thing to do with boneless, skinless chicken breast is to bread and fry it. But I saw a YouTube video of a bacon wrapped chicken pinwheels on a skewer, so I decided to do my version.
Started with a Lemon Chili Honey marinade, and cut the chicken into strips and then butterflied the strips lengthwise and put them in the bag with the marinade. After a 2 hour soak I laid out the chicken strips and then lined the pinwheels with sage and chili slices and then rolled up, wrapped with thick bacon, tied them up and then ran the swords through them
I rotated quite often, basted with excess marinade and threw on a couple of young onions to char. It ended up being very sweet, but well balanced with the lemon, bacon and chili. Damn good way to eat boneless, skinless chicken breast!
