• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Never done a boneless roast and i am wondering how long a 4.8 lbs boneless butt roast will take.

Id like to knock it out as fast as possible.

Ill probably cook at around 300+ and wrap...

.......Shack sauce will be involved

I tie them up and cook them like a bone-in, at 250° the get done about 1.5 hours sooner in my smoker, but I don't wrap.

Maybe if you didn't tie it, just lay it open flat, and with wrapping I am sure it will finish a lot sooner with the higher heat.

That size would cook pretty fast. For me a boneless takes no longer than one with a bone in it. I do tie it pretty tight though.

You want it fast as possible, cut the shoulder so it lays as flat/even as possible. Cook it on your 007
It might even fit in your roto basket.

Unfortunately I'm up at my folks place in mid Michigan.

Im working with a cheap sams club duo gas charcoal hybrid.

The situation is less than ideal

What happened to the smoke :noidea:

Maybe i should put some more soaked wood chips on the fire.

On at 930 and off to be on the parade

Parade

Every year we run the golf carts through the parade

Rat rod cart

The star of the show

The Incredible Dr. Pol and his son drove their cars in the parade too

The temp held in the grill for the 3 hrs, long enough to do our thing.

Refueled and wrapped after 3 hrs

Looking good, keep us posted on the end results with your actual cooking times.

Done

Cook time was 0930-0300.

No clue how hot i cooked or IT. It just probed tender and had no rest. I would've taken it further but we had unexpected guess and hungry kiddos.

The shack sauce was recieved with trepidation. Sweet baby ray is what they crave and who am i to tell them what taste good.

I also took leftover chicken breast and braised it for pulled.

Happy 4th all.

This blurry pic was all i managed

...just have fun visiting with your Mom. The food looks good to me. Happy 4th brother.

Nice job Steve!
