We provide BBQ for the Hospital nurses in NICU about once a month. About 30 of them total and sometime we make sure there is enough for night shift. Usually, I do pulled pork sandwiches already made up wrapped in foil or Ribs. A few times brisket, but it is harder to serve and not as convenient. I have only used my griddle a couple of times but would like to try a bigger cook. So with the following criteria any suggestions from the brethren.

1.cost (not necessarily at the top of list) but reasonable
2. easy and quick to cook, low prep time
3. I deliver in half pans right after cooking (5 mins away) so I don't really need a warmer
4. Easy for them to prepare or eat
5. Keeps well, they do not eat at the same time (baby's dictate)
 
Fajitas? One pan full of chicken, other pan full of onions and peppers. Maybe alittle sour cream and cheese for topping. On the same note tacos
 
I was on vacation in Mexico and we went to a restaurant where they had this whole hibachi/bennihana routine on a griddle.

What they made was fried rice with mixed veggies and then grilled up some steak, chicken and shrimp. I took some notes to do at home since it looked pretty easy and basic but the griddle was perfect for doing this. I have zero idea how to cook rice but this is what I noticed:

Rice with soy sauce, garlic and olive oil.

For beef: Garlic, soy sauce and butter
For chicken: Garlic, soy sauce and lemon juice

Veggies: onions, carrots, broccoli, red pepper, yellow pepper, mushrooms and zucchini.

Cook the meat and veggies up and then mix it all in.

Seemed like the perfect meal to make on a griddle which has me looking at a Blackstone now that I'm back home!

I think this would be pretty cost effective. You can cook a lot of fajita fixings on a blackstone.
 
I made lamb souvlaki with tzatziki and seasoned pita for easter and it took about ten minutes total. Most of the work can be done ahead so the actual cooking is really quick.

I took pocketless pita rounds, rubbed them with olive oil, salt, minced garlic, and oregano and threw them in the fridge over night.

Cut the lamb thin and marinated over night in a souvlaki marinade

Day of, I just threw the pitas on the blackstone until they were browned an softened, threw them in a foil pan and covered it with foil to keep warm

Put a little extra oil on the blackstone (maybe not even necessary because of the oil in the marinade and the fat in the lamb) and fried it all up. Put that in another pan and covered it with foil and then served with the tzatziki.

The seasoned, warmed pita really made it feel like it came from a greek restaurant.


I know that cost is an issue so chicken thighs are a cheap and delicious way to make souvlaki as well as any kind of pork loin or tenderloin.

If you wanted a side dish with this, a greek salad is another relatively inexpensive and easy to make ahead option.

Great idea. Would be easy to expand to wider selection as well. Do chicken, beef and maybe some kind of inexpensive seafood.
 
I just pulled the trigger on a Blackstone this morning and have it shipping to work. I'm gonna put it together and season it at work and the next day cook a big lunch for employees. I was thinking fajitas for easiness and costs also.

I love doing fried rice on the Blackstone. It goes so quickly, and it's always so much better than I'd expect it would be.

Fajitas are always a winner and easy to prep and make, too.

I haven't done it on a Blackstone but I've made this recipe several times for 30+ people at Christmas gatherings. Obviously you'll need to adjust for the amount of people but it's easy and tasty.

I've posted a Crack Slaw recipe a few times, super easy to make. Start with a few pounds of ground turkey, chicken, pork and/or beef. Season with Soy sauce, Oyster sauce, use some sesame oil, the flavorings are up to you.

For veggies, it's whatever extras you want beyond the couple of bags of pre shredded Cole slaw. I've added red peppers, matchstick sized carrots, celery, pea pods, bok choy, water chestnuts, etc. Add a sufficient amount of Soy to keep things nicely moist and flavored, add the Cole slaw near the end as it doesn't need to cook much. Mix it all together, place in serving pans and it'll be a hit.

If you're pressed for time use as much bagged veggies as possible, otherwise cut up whatever you want to add beforehand. The cook goes real quick, you should be done in under 15 minutes.
