• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

The best part about working from home is that I can throw food on whenever I want. Decided to throw on some beef ribs today while I work on some contracts. Got the Maverick right next to my computer while I work. Still got a few hours left on these short ribs. They smell good.

Mmmm... tasty. I also work from home on occasion and it is nice to be able to start up the PBC and throw something on in 20 minutes, and then not have to tend the fire for 2 hours or more!

This isn't my Kettle. It's my Smokey Mountain 18.5 (I took the bottom grate out for this cook). That being said, you can do beef ribs on a Kettle. 285 is my go to temperature on beef ribs. 6-8 hours (when tender). I would imagine it would take a little more baby sitting. I did spare ribs on my Kettle before I had my Smokey Mountain. You can do them lower in temperature but I've never really tasted the benefit. 285 works for me.

I walked into my local HEB. All they had were finger ribs. So I walked up to the butcher and asked him for plate short ribs. He looked confused and looked to the second butcher. He knew what I was talking about. A few minutes later he emerged with a two-pack. I bought them on the spot.
