What a great friend you have there. :thumb: Great to see you could start showing her (uuuh...the smoker) some love. I guess your ECB is going to get a little lonely now. I just gave mine away after I bought my WSM.

It's funny you mention that. I've been cooking on an ECB for almost 20 years and have turned out some great Q...However, I'm doing a big cook next Sunday (Indy 500) and I'm getting a little anxious. I usually start a big cook the night before, sleep for 5-6 hrs and check the water pan. Having never done this on a WSM, I sure hope MR. Minion is correct with his times and method:scared:
