Digging through the freezer today to find something special for supper tonight I found this.
After doing a little reading on a butcher site I found this is the best tasting sirloin off of a cow. Sounded perfect for a late night dinner so I vac'd it.
And got out the Anova to do a sous vide with it. Set it to 122 degrees with hot water already in it.
Not sure if I'll be able to grill tonight or not. We have storms rolling through and the wind is blowing pretty hard.
Worst case I'll do it on the CI pan and finish in the oven. I'll add more of the cook later tonight after company leaves... or tomorrow if they stay. :becky:
